Looking for a warm & tasty snack to go with your cup of afternoon tea/coffee? Then look no further, these (eggless) oat & coconut cookies are the perfect accompaniment!
Prep time: 10 mins / Cooking time: 25 mins / Makes: 6-8 large cookies / Cost: 6-8 cookies (£1), with total ingredients cost at £15.
Oat & Coconut Cookies: Ingredients
- 100g softened butter
- 1 tbsp brown sugar
- ½ tbsp white sugar
- 1 cup plain flour
- 1 cup rolled oats
- ½ cup desiccated coconut
- 1 handful coconut shavings
- 1 tsp baking powder
- 1 tsp vanilla
- ½ tsp cinnamon powder
- 1 tbsp vegetable oil
- 1 – 3 tbsp water or milk
Oat & Coconut Cookies: Method
- Preheat the oven to 170C/350F or gas mark 4, and line a tray with brown baking paper
- In a bowl, beat together the brown and white sugar with the butter and vanilla until light and creamy.
- Mix in the flour, oats, coconut desiccated, baking powder and cinnamon. The mixture will be semi loose at this stage. I tend to use my hands at this stage to get the butter coating all the ingredients.
- Add the oil, mix.
- Add 1 tbsp of water/milk, mix. If it is still dry and you don’t feel you could roll a cookie in your palm without it completely disintegrating, add another tablespoon of water/milk. A total of 3 tablespoon should be enough.
- Fold in the coconut shavings.
- Scoop up 2 tablespoons of the mixture into the palm of your hands and roughly shape it into a circle and place it on the lined tray.
- Cook for 25 min or until golden.
- Leave it to cool for 5 mins before tucking in. For chocolate lovers, why not melt a few cubes of chocolate and drizzle it over!
